Ingredients:

  • 2 cans (20 oz each) young green jackfruit in water or brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 cup BBQ sauce (store-bought or homemade)
  • Salt and pepper to taste
  • 4 soft sandwich buns
  • Coleslaw (for topping)
  • Pickles (optional, for serving)

Instructions:

  1. Prepare the Jackfruit: Drain and rinse the jackfruit, then pat it dry. Use your fingers or a fork to shred the jackfruit into pieces, discarding any tough cores.
  2. Sauté the Onions and Garlic: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Cook the Jackfruit: Add the shredded jackfruit to the skillet along with the smoked paprika, cumin, and chili powder. Cook for 5 minutes, stirring occasionally, to allow the spices to coat the jackfruit.
  4. Add the BBQ Sauce: Pour the BBQ sauce into the skillet, stirring to combine. Reduce the heat to low and simmer for 15-20 minutes, or until the jackfruit is tender and fully infused with the BBQ flavor. Season with salt and pepper to taste.
  5. Assemble the Sandwiches: Toast the sandwich buns if desired. Spoon the BBQ jackfruit onto the bottom halves of the buns, then top with coleslaw and pickles (if using). Place the top halves of the buns on the sandwiches.
