Start your day with this protein-packed and flavorful Tofu Scramble, a perfect plant-based alternative to traditional scrambled eggs. Made with firm tofu, a mix of vibrant vegetables, and seasoned with turmeric for color and flavor, this scramble is both nutritious and satisfying. It’s easy to customize with your favorite vegetables and can be served with toast, avocado, or in a breakfast burrito.

Ingredients:

  • 1 block (14 oz) firm tofu, drained and pressed
  • 1 tablespoon olive oil
  • 1/2 onion, finely chopped
  • 1/2 bell pepper, diced
  • 1 clove garlic, minced
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup nutritional yeast
  • Fresh spinach or kale (optional)
  • Fresh herbs like parsley or cilantro (optional for garnish)

Instructions:

  1. Prepare the Tofu: Crumble the tofu into bite-sized pieces with your hands or a fork.
  2. Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened. Add the minced garlic and cook for another minute.
  3. Cook the Tofu: Add the crumbled tofu to the skillet with the vegetables. Stir in the turmeric, smoked paprika, cumin, salt, and pepper. Cook for 5-7 minutes, stirring frequently, until the tofu is heated through and coated with the spices.
  4. Add Nutritional Yeast and Greens: Stir in the nutritional yeast, and if using, add spinach or kale. Cook until the greens are wilted and everything is well combined.
  5. Serve: Serve hot, garnished with fresh herbs if desired. Enjoy with toast, avocado, or in a breakfast burrito.
