Ingredients:

  • 1 can (14 oz) hearts of palm, drained and shredded
  • 1 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup vegan mayonnaise
  • 1/4 cup finely chopped green onions
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Old Bay seasoning
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. In a large bowl, combine the shredded hearts of palm, breadcrumbs, vegan mayonnaise, green onions, Dijon mustard, Old Bay seasoning, lemon juice, parsley, garlic powder, smoked paprika, salt, and pepper. Mix well until all ingredients are fully incorporated.
  2. Form the mixture into small patties, about the size of traditional crab cakes.
  3. Heat a skillet over medium heat and add a little olive oil.
  4. Fry the patties in batches, cooking for 3-4 minutes on each side until golden brown and crispy.
