Ingredients:

  • 3 ripe bananas, mashed
  • 1 ½ cups almond flour

  • ¼ tsp salt
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tbsp flaxseed meal + 3 tbsp water (flax egg)
  • ¼ cup almond milk (or any plant-based milk)
  • ½ cup chopped walnuts or pecans (optional)
  • ¼ cup dairy-free chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a small bowl, mix the flaxseed meal with water to create a flax egg. Let it sit for 5 minutes until it thickens.
  3. In a large bowl, combine the mashed bananas, melted coconut oil, vanilla extract, and almond milk. Mix well.
