Jackfruit Curry

Ingredients:

  • 2 cups young jackfruit (canned or fresh, shredded)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable broth
  • 1 red bell pepper, sliced
  • 1 carrot, sliced
  • 1 cup green beans, trimmed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat olive oil in a large pan over medium heat. Sauté onions until translucent.
  2. Add garlic, ginger, curry powder, turmeric, and cumin. Cook for 2 minutes until fragrant.
  3. Stir in the jackfruit, coating it with the spices. Cook for 5 minutes.
  4. Pour in coconut milk and vegetable broth. Bring to a simmer.
  5. Add bell pepper, carrot, and green beans. Simmer for 15-20 minutes until vegetables are tender.
  6. Season with salt and pepper. Garnish with fresh cilantro. Serve hot with rice.
