Ingredients:
- 2 cups young jackfruit (canned or fresh, shredded)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- 1 red bell pepper, sliced
- 1 carrot, sliced
- 1 cup green beans, trimmed
- 2 tbsp olive oil
