Ingredients:

  • 1 can young green jackfruit in water, drained and shredded
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • 1/2 cup vegetable broth
  • 1 tbsp tomato paste
  • Tortillas
  • Fresh salsa
  • Sliced avocado
  • Lime wedges
  • Fresh cilantro

Instructions:

  1. Heat olive oil in a pan over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Add the shredded jackfruit, smoked paprika, cumin, chili powder, oregano, salt, and pepper. Cook for about 5 minutes, stirring occasionally.
  3. Add the vegetable broth and tomato paste, and simmer for another 10 minutes until the jackfruit is tender and the flavors are well combined.
  4. Warm the tortillas and fill them with the jackfruit mixture. Top with fresh salsa, avocado slices, lime wedges, and cilantro.
