Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, bring the quinoa and water (or vegetable broth) to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is tender and the liquid is absorbed. Remove from heat and let it cool.
  2. In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, olives, red onion, parsley, and mint.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
