Ingredients:
For the Stew:
- 1 cup dried lentils, rinsed
- 2 medium sweet potatoes, peeled and diced
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper (optional, for extra heat)
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Red chili flakes, for garnish
Instructions:
Prepare the Base:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the garlic and ginger, and sauté for another minute until fragrant.
Add the Spices:
- Stir in the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for 1-2 minutes to toast the spices and enhance their flavors.
Add the Lentils and Sweet Potatoes:
- Add the lentils, sweet potatoes, diced tomatoes (with their juice), and vegetable broth. Stir to combine.
Simmer the Stew:
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 25-30 minutes, or until the lentils and sweet potatoes are tender.
Add the Coconut Milk:
- Stir in the coconut milk, and season with salt and pepper to taste. Let the stew simmer uncovered for another 5-10 minutes, allowing the flavors to meld.
Serve:
- Ladle the stew into bowls, and garnish with fresh cilantro and a sprinkle of red chili flakes. Serve hot, and enjoy the comforting warmth of this hearty stew.
