Ingredients:

  • For the Stew:

    • 1 cup dried lentils, rinsed
    • 2 medium sweet potatoes, peeled and diced
    • 1 can (14 oz) coconut milk
    • 1 can (14 oz) diced tomatoes
    • 1 onion, finely chopped
    • 3 cloves garlic, minced
    • 1 tablespoon fresh ginger, grated
    • 2 teaspoons ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon turmeric
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon cayenne pepper (optional, for extra heat)
    • 4 cups vegetable broth
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • Fresh cilantro, for garnish
    • Red chili flakes, for garnish

Instructions:

  1. Prepare the Base:

    • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
