Ingredients

  • 1 block firm tofu, drained and crumbled
  • 1 cup spinach, kale, or other leafy greens, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp nutritional yeast
  • 1 tsp turmeric powder
  • 1 tsp soy sauce or tamari
  • 1/4 tsp black salt (kala namak) for eggy flavor (optional)
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Prepare the Tofu: Drain the tofu and crumble it into small pieces using your hands or a fork.
  2. Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent. Add the minced garlic and sauté for another minute.
  3. Add Tofu and Seasoning: Add the crumbled tofu to the skillet and stir well. Sprinkle in the turmeric, nutritional yeast, soy sauce, black salt (if using), and season with salt and pepper. Cook for 5-7 minutes, stirring frequently.
  4. Add the Greens: Toss in the chopped greens and cook until they are wilted and tender, about 3-4 minutes.
  5. Serve: Remove from heat and garnish with fresh herbs if desired. Serve warm.
