Ingredients:

  • 1 cup sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 4 nori sheets
  • 1 cucumber, julienned
  • 1 red bell pepper, julienned
  • 1 avocado, sliced
  • 1 mango, sliced
  • Pickled ginger
  • Sesame seeds
  • Soy sauce, for serving
  • Wasabi, for serving

Instructions:

  1. Prepare the Sushi Rice:

    • Rinse the sushi rice under cold water until the water runs clear.
    • Cook the rice according to package instructions. Once cooked, transfer to a bowl and let cool slightly.
    • Mix the rice vinegar, sugar, and salt in a small bowl until dissolved. Pour over the cooked rice and gently mix to combine. Let the rice cool to room temperature.
  2. Assemble the Sushi Rolls:

    • Place a nori sheet on a bamboo sushi mat, shiny side down.
    • Spread an even layer of sushi rice over the nori, leaving a 1-inch border at the top.
    • Arrange cucumber, bell pepper, avocado, mango, and pickled ginger in a line across the center of the rice.
    • Sprinkle sesame seeds over the fillings.
    • Using the sushi mat, carefully roll the nori and rice over the fillings, pressing gently to form a tight roll. Continue rolling until the nori is completely wrapped around the rice and fillings.
  3. Slice and Serve:

    • Using a sharp knife, cut the roll into 6-8 pieces.
    • Repeat with the remaining nori sheets and fillings.
    • Serve the sushi rolls with soy sauce, wasabi, and extra pickled ginger.
