Vegan Burgers

Made from a combination of black beans, lentils, and quinoa, these plant-based burgers are not only nutritious but also grill up beautifully. Ingredients:

  • 1 cup cooked black beans (drained and mashed)
  • 1 cup cooked lentils
  • 1/2 cup cooked quinoa
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for cooking)
  • Burger buns
  • Vegan cheese slices (optional)
  • Lettuce, tomato, pickles, and other desired toppings

Instructions:

  1. Prepare Flax Egg: In a small bowl, mix ground flaxseed with water. Let it sit for about 5 minutes to thicken.
  2. Mix Ingredients: In a large bowl, combine mashed black beans, cooked lentils, cooked quinoa, chopped onion, minced garlic, breadcrumbs, and the flax egg.
  3. Season: Add soy sauce, smoked paprika, ground cumin, salt, and pepper to the mixture. Mix well until all ingredients are evenly combined.
  4. Form Patties: Shape the mixture into burger patties, about 1/2 inch thick. You should get around 6-8 patties, depending on the size.
  5. Cook Patties: Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are crispy and heated through.
  6. Grill Option: For a barbecue, preheat the grill to medium heat and cook the patties for 4-5 minutes on each side.
  7. Assemble Burgers: Place each patty on a burger bun. Add vegan cheese slices if desired, and top with lettuce, tomato, pickles, and your favorite condiments.

Serving Suggestions: Serve these vegan burgers with a side of sweet potato fries or a fresh salad for a complete meal.
